Vegan in Italy

I recently travelled to Italy, and I didn’t know how many options I would have being gluten free and vegan, but actually there was always an option for me, even in the smallest towns. In some of the smaller towns, the options were more limited. However, there was always gluten-free pasta and vegetables. If you are not gluten-free, you should not have a problem at all being vegan. I did always make sure I had a kitchen where I could cook every location I went which helped out in some places that had less options. In the bigger cities, there were too many options. Eleven Madison Park

On a recent visit to New York City, I decided to check out Eleven Madison Park, which is a 3 star Michelin Restaurant. What does it take to get a Michelin star or 3 stars? Michelin’s inspectors eat at restaurants (anonymously) on a regular basis for 18 months. A one-star restaurant must have four inspections, whereas three-star restaurants must have ten.  Michelin stars are dependent on a variety of factors, including creativity, value, quality, skill, and consistency. A restaurant may lose its star rating if any of these factors are compromised. 

Eleven Madison Park opened in 2021 and was not vegan at that time. However, Chef Daniel Humm decided (after obtaining 3 Michelin stars), to make the restaurant vegan because animal agriculture was not sustainable…risking his three michelin stars!
